The number of units is a nod to the month and date of the first PlayStation release.

Over on PS Direct, the listing for the 30th Anniversary PS5 bundle has a new notice. "Not in stock? Please check back on Thursday 21st November from 9am PST," it reads. So, if you're still in the market for this retro-flavoured console, it'll be available for purchase directly from Sony starting at 9am PST / 12pm EST.
