A poisonous Greenland shark can make one feel intoxicated if eaten fresh. Early Icelandic settlers discovered a way to make its meat safe by first burying the shark in sand and gravel for six to twelve weeks. This process forces the dangerous substances out of the flesh. The shark is then cut into strips and hung to dry for another four to five months until a brown crust forms. Known as hakarl, this dish was once a survival necessity and is still enjoyed during the midwinter festival Thorrablot.
